Chestnut cake

INGREDIENTS
  • ½ kg of chestnuts
  • 150 g sugar
  • 125 gr. of butter
  • 3 eggs
COOKING SETTINGS

Chestnuts

  • Mode: steam
  • Temperature: 90 ºC
  • Time: 5 minutes
  • Humidity: 100%

Cake

  • Mode: mixed
  • Temperature: 190 ºC
  • Time: 15 minutes
  • Humidity: 10%
PREPARATION

Make an incision in the chestnuts and place in a gastronorm bucket perforated 20 mm deep. Cook the chestnuts for 5 minutes at 90 ºC steam mode in the mychef oven.  Peel and crush. Add the sugar, the ointment butter and the egg yolk.

Whip the white to a snow point and add to the previous dough.

Place in a mould and cook at 190 ºC with 10% humidity for 15 minutes.

 

PLATING

Cut a portion of cake on the plate, add a peeled chestnut and serve.
