Rice pudding

INGREDIENTS (10 serves)
  • 700 grams of round rice
  • 1 lemon peel
  • 1 cinnamon stick
  • 600 grams of white sugar
  • 2 litres of whole milk

For the rice

Place the rice in a bowl and wash it a couple of times to remove the starch. Once washed, cover it with water and leave it to soak for an hour and a half to two.

Then use the iSensor vacuum packer. Put the whole milk, the sugar, the cinnamon stick and the lemon peel in a vacuum bag. Set up a manual program with intelligent packaging and 4 repetitions to infuse the milk with the rest of the ingredients.

Once the time for soaking the rice has elapsed, strain it and place it in a smooth Gastronorm tray 60 millimetres deep. Add the contents of the vacuum bag (infusion of milk with sugar, lemon and cinnamon).

Place in the mychef oven and cook in steam mode, at 95 ºC, for 32 minutes.

At the end of the cooking cycle, remove the tray from the mychef oven, stir the rice and let it temper.



This dish allows for multiple plates. It can also be crushed to make a cream of rice pudding.

One suggestion is to place the rice pudding in high glasses or some deep bowl and decorate with a little ground cinnamon.
