A week ago the XV National Pinchos and Tapas Competition – City of Valladolid was held, together with its III World Tapas Championship, an event in which Mychef professional ovens have accompanied the participants in the preparation of their recipes.
During the 4th, 5th and 6th of November the Millennium Dome of Valladolid was filled with attendees from different parts of the world who were fighting to get the long-awaited awards in two categories, the best national and the best globally ‘tapa’.
Thanks to our distributor Inhostel, gold collaborator of this contest organized by different public entities and associations, we have been able to bring the technology of Mychef professional ovens to chefs who already knew them and to other new ones.

Easy-to-use professional ovens
In an auditorium full of public and in different groups, 50 chefs have had to make in less than 25 minutes eight reproductions of their tapas, giving everything to surprise a jury formed by prestigious chefs. That is why the organization required an easy-to-use kitchen machinery that would maximize the activity of the contestants.

For a contest of these characteristics a fast and accurate cooking machinery is necessary. Therefore, the Mychef range has been the right choice. Its innovative MultiSteam steam injection system, which generates dense steam for only 45 seconds, in addition to the accuracy of its TSC (Thermal Stability Control) system that reduces thermal oscillations at low temperatures to only ± 0.2ºC, has allowed participants to obtain homogeneous results and greater uniformity in their tapas.
In addition, to help participants achieve the best results with Mychef professional ovens, our chef Josu Conde offered them support and advice for use during the competition.
He was also able to carry out a demonstration of vacuum cooking with the iSensor vacuum packer at the Inhostel booth, explaining its utilities and advantages to interested parties.
Crunchy tapas with DryOut technology
After three intense days of competition it was time to announce the winners of the National Pinchos and Tapas Competition – City of Valladolid. The jury, made up of renowned figures such as María José Meda, chef of El Batán and holder of a Michelin Star; chef Miguel Cobo, also with a Michelin Star for Cobo Vintage; Begoña Rodríguez, chef of La Salita Restaurant; and Jesús Santamaría, owner of Grupo Bokado; were in charge of deciding the two winning gastronomic proposals and the different finalists in a close final.
The winner of the National Pinchos and Tapas Competition – City of Valladolid has been Francisco Javier Ruiz, from La Jamada del Arrabal in Burgos, for his ‘Chicken Escalmendrado’. This young chef has won the first prize for this elaboration full of flavor.
To do it, Ruiz uses among others the technique of vacuum cooking to take advantage of all its advantages. A curiosity? At La Jamada del Arrabal they use our professional Mychef ovens on a daily basis.
As for the winner of the World Tapas Championship the prize went to Pascal Etcheverria, chef of the Villa Koegui-Restaurant Le Carré hotel in Bayonne for his ‘Beef cheek, carrots, duck pate and passion fruit’. In its case, this cover is an adaptation of a typical French recipe, the ‘bœuf bourguignon’, composed of ox cheek macerated in red wine.
To finish it, Etchevarria cooked with the DryOut system in our ovens to reach a crunchy texture.
In addition to the two main winners, other participants such as Casa Pedro in Zaragoza, runners-up in the World Championship; Taberna Waska in Vitoria, award for Best Traditional Tapas, or the chef of the jury Miguel Cobo; use Mychef professional ovens. This shows the quality of the businesses that rely on our equipment and its versatility for industrial kitchens.
