What is El Celler de Can Roca?
El Celler de Can Roca is many things at the same time. It is a restaurant, but it is also a family, a company, and a centre of creativity and innovation. For me, cuisine is a language. It is the tool with which we can tell stories: our tradition, our landscape, our memory, and the experiences that define us.

What role does technology play in the kitchen at El Celler?
Technology is essential in our kitchen. We are probably one of the kitchens with the most modern and old technology at the same time. We don’t give up anything. Technology allows us to achieve precision and control that would otherwise be impossible, but always in combination with the traditional techniques that are also part of our identity.

How important are Mychef ovens in the kitchen of El Celler?
Mychef ovens are indispensable in our kitchen. We have several generations of ovens: some older ones, which still work perfectly, and other more modern ones, which are spectacular. They provide us with speed, precision and versatility for direct cooking, regeneration and techniques such as steam, convection or mixed. This equipment is a fundamental part of our daily operations.

Our daily challenge is that each person who visits us has more than just a meal, that they take away an experience to remember. Many go to great lengths to come here, and our mission is to reciprocate with hospitality, generosity and a genuine connection. We want them to leave happy, to feel that they have experienced something truly special.

What would you highlight about Mychef technology?
What I value most about Mychef is the confidence and reliability they give me on a day-to-day basis. The Thermal Stability Control (TSC) technology is incredibly precise, maintaining thermal stability with a minimum margin, which is essential for processes such as low-temperature cooking. For me, Mychef is not just technology; it’s a family that accompanies me and understands the needs of my kitchen.

How do you imagine the future of El Celler and gastronomy?
I believe that the future of El Celler lies in continuing to evolve, combining tradition and innovation. We want to stay true to our roots, to the Girona landscape, while exploring new ways to surprise those who visit us. For me, gastronomy is not just about cooking, but about transmitting emotions, telling stories and leaving a mark on people. And that is the path I want to continue on with my team and the technology that accompanies us.
