Why did you decide to focus on sweets?
Since I was a child, I have always been attracted by the creativity that pastry allows. Desserts have something very special: “they are not necessary, but we allow ourselves to be.” In pastry, we not only look for the dessert to be delicious, but for it to be a unique experience, something that surprises and excites.

What is the gastronomic proposal of Esperit Roca like?
At Esperit Roca we offer an innovative gastronomic proposal, a choice of 2 main courses, but with a very special touch in the desserts. Where the star of the menu is the sweet, with an experience of 6 desserts that allows us to explore different textures, flavours and concepts, always in harmony with the rest of the meal.

At Esperit Roca we strive for excellence in every detail and Mychef is key to achieving this. Their equipment, such as iBake, gives us the precision and reliability we need in the pastry shop. They allow us to experiment and take our ideas to the limit, with the certainty that each dessert will be impeccable.

What is Esperit Roca and what is so special about this new project?
Esperit Roca is a different and very personal concept of the three brothers. It is a place where gastronomy is experienced in a unique way. The restaurant’s proposal is special because we fuse avant-garde cuisine with tradition, and the dessert is where we really stand out. We offer a unique tasting menu that puts the sweet as the protagonist, something you don’t see in other places.

How do the gastronomic restaurant and the hotel complement each other from a gastronomic point of view?
The two spaces complement each other perfectly. The restaurant offers a haute cuisine gastronomic proposal that puts the sweet at the centre, while the hotel offers a relaxed atmosphere to enjoy the full experience. The idea is that the guest feels part of an experience that goes beyond the food, a place where gastronomy and hospitality merge in an exceptional way.

What do you value most about the Mychef iBake oven?
iBake is indispensable in our kitchen because it guarantees homogeneous results, even when baking at full load. In addition, its ease of programming and saving recipes saves us time and avoids mistakes, allowing us to focus on what really matters: creating unique desserts that surprise and excite our guests.
