Lucila Canero, a pastry chef specialising in plant-based and gluten-free desserts, has managed to combine creativity and health in her creations.
Owner of La Luciernaga, a patisserie that defies the conventions of traditional baking, Lucila has become a benchmark for conscious baking, offering delicious products that respect vegan and gluten-free diets, without sacrificing taste or quality.

How did you start your career as a pastry chef?
My first approach to baking was working as a kitchen assistant, collaborating with the pastry chef. When I arrived in Barcelona, I was lucky enough to train with great masters and work in some of the city’s most renowned bakeries. Pastry-making allowed me to connect deeply with traditions and festivities, which enriched my learning and allowed me to immerse myself in the pastry culture.

How has Mychef helped you in your daily work?
I am delighted with the performance of the Mychef BAKE oven. Its precision, steam regulation and self-cleaning system are some of the features I value the most. In addition, its ability to combine air and steam allows me to achieve more consistent and professional results, which makes my day-to-day work much more efficient.

What criteria do you consider when choosing an oven for your bakery?
For my project, I needed an oven that was not too big and that integrated both convection and steam. I received recommendations from friends who were already using Mychef and I saw that it met all my requirements. The oven is key in my bakery, we use it for everything from roasting nuts to making pralines.

How would you define the pastry of La Luciernaga?
It is different because it is gluten-free and vegan and there are no animal ingredients in the bakery. Despite this, we believe that it has nothing to envy to traditional pastries. It has a very light and smooth taste, you eat it and feel light, with just the right amount of sweetness to achieve a perfect balance.

What are the most challenging creations, and how do you approach them with Mychef?
Brioche is one of the biggest challenges, as it is a recipe that traditionally contains ingredients such as butter and eggs, but we prepare it without them. Thanks to the Mychef BAKE oven, we achieve a perfect texture. The oven has been essential to get the quality and precision we need.
